| How to enjoy | Please use appropriate glassware. Depending on the ambient temperature, serve this wine between 44 and 48 degree F. Decanting this wine for some hours before you enjoy it will benefit the expression of its character greatly. |
| Food pairing | This wine will pair well with umami savory seafood such as oyster, steamed mussel, crab, and roasted salmon. |
| What you might taste | Pale straw in color, this wine leaves no doubt that it wants to be (and is) different. Of all previous releases, this wine is the most savory, earthy and driest with a floral, slate and sulfur like aroma that reminds of some of the very age worthy Mosel Rieslings. The palate is softer than its "twin" but shows the trademark texture and viscosity of our spontaneous fermented wines. A rather long bottle age should be very much ahead of this wine. Please decant this wine if you decide to drink this wine within the next five to seven years. |
